Government & Food Safety
Industry works together to address deli-meat safety
During a recent public meeting, the USDA's Food Safety and Inspection Service and the FDA's Center for Food Safety and Applied Nutrition discussed and sought comments on a quantitative risk assessment of meat sold at grocers' deli counters. According to the FDA, meat sliced at the deli counter is seven times more likely to contain listeria than meat sliced and packaged at a manufacturing facility. "Retail delis provide an ideal environment for Listeria due to the types of foods -- [ready-to-eat] meats, cheeses, and salads -- the moist environment, and temperatures that support growth of Listeria," according to FMI's Listeria Action Plan for Retail Delis, published in November.
