General Mills turns to peas as alternative protein source
General Mills has spent two years working on a new Larabar, labeled ALT, that uses yellow pea powder as an alternative source of protein. Many companies are looking to incorporate protein into more products as consumers try to add more of it to their diets. General Mills chose peas because they are not an allergen and they have minimal impact on flavor, company food technician Faith Perry said. Bloomberg Businessweek (4/24)

PepsiCo to bottle Taco Bell's Mountain Dew Baja Blast
PepsiCo, which partnered with Taco Bell to create the Mountain Dew Baja Blast 10 years ago, will offer the beverage in bottles and cans for a limited time beginning May 5. The bottles will feature a small Taco Bell logo above the name and will be available at supermarkets and other retail outlets. Earlier partnerships between the two companies produced Taco Bell's Doritos-flavored tacos and Frito-Lay's Doritos in a Taco Bell flavor. Bloomberg Businessweek/The Associated Press (4/23)

Health craze boosts use of probiotics and prebiotics
Probiotics and prebiotics offer many benefits when incorporated into foods, especially dairy products, but adoption has been slower than anticipated due to high costs and lack of consumer education. But as consumers gain a better understanding of their benefits, use of probiotics and prebiotics in dairy products continues to grow, and the global market is expected to reach $31.1 billion by 2015. "The trend for increased fiber, however, seems to be the real driver, while prebiotic is a benefit that has not necessarily been sought after in a significant way yet," said Scott Turowski, technical sales manager for Sensus America. How food trucks drove changes in the way consumers think about food
Food trucks have expanded from a few spots on the coasts to cities and towns of all sizes throughout the U.S. in the past five years, and three-quarters of today's consumers say food trucks have influenced their behavior at restaurants and grocery stores, according to Datassential. Restaurant chains have responded to the mobile eateries' adventurous menus with new items of their own, such as Korean steak tacos, waffle sandwiches, gourmet grilled cheese and small-batch sodas. Stouffer's campaign says its meals put you "in the moment"
Stouffer's "Made for you to love" campaign says its frozen foods are so good that teenagers would rather eat than fight or text. In an ad from JWT New York, a teen shifts from texting to talking with her family after a single bite of Stouffer's lasagna. The ads focus on people who have "gone from a moment of being mesmerized by something else to, all of the sudden, [being] completely in the moment," said Stouffer's Director of Marketing Tom Moe. Hershey trims ad spending for its smaller brands
Hershey Co. reduced its overall marketing spend by 3% in the first quarter as it reined in investments in small brands. For the year, Hershey projects a single-digit drop in ad spending, but will keep levels for major brands more or less intact. Products such as Bliss and Simple Pleasures "have ended up playing more of a niche role than maybe we would have hoped," said CEO John Bilbrey. Harris Teeter is 1st grocer to offer USDA-certified Very Tender beef
Harris Teeter's Reserve Angus beef brand has earned the USDA's Very Tender beef certification, making Harris Teeter the first grocer to offer beef under the certification. The retailer says the certification is part of an effort to help shoppers better understand the meat choices they have when shopping there. "We are going above and beyond the norm to give our shoppers another measure of confidence they deserve when purchasing quality beef products. Our hope is that this label will help eliminate confusion at the meat case," Harris Teeter spokeswoman Danna Jones said. American City Business Journals/Charlotte, N.C. (4/24)

Dark chocolate may be good for us by being hard to digest
Dark chocolate and its flavonols have been found to have health benefits, but new research from Louisiana State University and Virginia Tech has found the reason may be that it is hard to digest. Louisiana State University researchers found that the stomach and small intestine broke down some of the cocoa powder, which accounts for the previously known benefits of cocoa's flavonols. The colon broke down the cocoa matter further, which provided cardiac benefits like reduced inflammation. The remaining cocoa matter, mostly fiber at this point, began to ferment and release cholesterol-improving substances. Virginia Tech discovered similar findings.
