Scientists are focusing on an enzyme in saliva called amylase as they work to explain the close link between the texture of food and enjoyment of it. A study that followed nearly 500,000 older adults for about 10 years found that those who ate the most red meat had a higher risk for stomach and esophageal cancer compared with those who limited their intake of red meat. The study also found an elevated risk of gastric cardia cancer linked to consumption of heterocyclic amine, a compound that forms when meat is cooked at high temperatures.
