General Mills' process lets protein bits keep their crunch
General Mills has filed a patent application for a process developed to keep protein particulates crunchy when used in products containing fruit pastes. Through the process, non-dairy and non-soy particulates are coated with syrup made from honey, tapioca, maple, brown rice, agave, sorghum or date to retain their crunchiness, and the process gives the particulates a 10-month shelf life. Nestle to bring modular factories to Africa
Nestle has created a new modular factory design for beverage and cocoa production that can be constructed twice as fast as traditional factories for 50% to 60% less investment. The new design offers the company a more streamlined way to enter developing countries, especially Africa, where the infrastructure isn't present to support traditional facilities. Datamonitor: Functional gums could energize industry
Functional gums, including varieties that help burn fat or boost energy, could become heavy hitters in the chewing gum segment and they now represent 13% of the $19.7 billion category, according to Mitsue Konishi of Datamonitor. Study: Almonds could reduce heart disease risk in men
A new study suggests that eating almonds, even for a short amount of time, can help reduce the risk of heart disease by improving blood flow and lowering blood pressure. "A short-term almond-enriched diet can increase plasma alpha-tocopherol and improve vascular function in asymptomatic healthy men between 20 and 70 years of age without affecting plasma lipids or markers of oxidative stress," wrote the researchers.
