  • Local ingredients, with a dollop of Hellmann's
Many chefs who pride themselves on using organic, locally sourced fare say they also like, and sometimes rely on, supermarket items like American cheese, Heinz ketchup and Skippy peanut butter. Chef Linton Hopkins of Atlanta's Holeman & Finch Public House said, "I use Coke all the time in our cooking ... I use it in barbecue sauce. Coke has a lot of aromatics in it. We rub it on suckling pig." Wylie Dufresne, the chef at WD-50 in New York, is never without his Land O'Lakes American cheese. "I've got probably four five-pound blocks of it in my walk-in right now. I'm constantly snacking on it," he said. The New York Times (tiered subscription model) (7/2) LinkedInFacebookTwitterEmail this Story
  • Experts praise global food supply
Public-policy experts Pierre Desrochers and Hiroko Shimizu argue that the global food-supply system is better for the planet and economy than local food sources. "Local food initiatives that result in higher grocery bills, inconvenient pickup arrangements, and less selection in terms of processed food ultimately leave consumers with less money and time to build local social capital in other ways," they write.
